BTS Inspiration: Easy, & Healthy Lunch Recipes

I know that they say breakfast is the most important meal of the day, (which I do agree with btw) lunch is also another important meal. Lunch is in the middle of your day and I think of it as refueling yourself for the rest of your day. Anyway I think it is important to make sure you are eating healthy so we wanted to share with you 5 of our favorite lunch recipes that we make the night before that we can grab and go in the morning.

1. Turkey Wrap

Whole Wheat Wrap

3-4 Slices of Turkey

1/4 - 1/2 Avocado, mashed

Handful of Spinach

4-6 Cucumber Slices

1 tbsp. Dressing (opt.)

First lay the wrap on a plate and using a fork mash 1/4-1/2 of an avocado on the wrap. Add the turkey, sliced cucumber, spinach and any additional toppings you’d like. Then all you have to do is wrap it up. You can put it in the fridge or make this the morning of and take it with you.

2. Strawberry Spinach Salad

Strawberries

Spinach

For the dressing

-balsamic

-olive oil

-Dijon mustard

Nuts of your choice (opt.)

Put the spinach in a bowl and toss your cut up strawberries in. Make the dressing and pour it on top, mix it all together and if you want you can add on some nuts. And there you have it, a strawberry spinach salad!

3. Egg Salad Sandwich

Hard boiled eggs

Mayo

Salt and Pepper

Mustard

Cut up the hard boiled eggs and mix in the mayo and mustard. Top it off with some salt and pepper and put that mixture between two pieces of bread and that's it!

4. Zupa's Wisconsin Cauliflower Soup

2 tbsp. butter

1 white onion, diced

2 tsp. minced garli

1/4 c. flour

2 c. milk

3 c. chicken broth (or vegetable broth)

2 tsp. salt

1 head cauliflower, chopped

1 c. shredded pepper jack cheese

2 c. shredded white cheddar cheese

See here for more. I would buy a thermos for soups so it stays nice and warm thorughtout the day!

5. Pasta And Broccoli

1 c. penne (or any other kind of pasta)

salt and pepper

2 c. broccoli

1/4 c. grated parmesan

2 tbsp. olive oil

Lemon wedge (opt.)
